Ham Pasta Salad

List of Ingredients
- 1 pound your favorite medium cut pasta (bowties, medium shells, elbow macaroni, rotini), cooked
- Drizzle of olive oil
- 2 cups chopped ham
- ½ cup chopped celery
- ½ cup chopped Vidalia or other sweet onion
- 1 green onion, sliced
- 1 cup shredded or cubed Cheddar cheese
- 1 cup grape or cherry tomatoes, sliced
- 2 Tbsp pickle juice (optional)
- 1 cup mayonnaise
- ¼ cup milk
- 1 packet dry Ranch dressing mix
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions; rinse and drain. Drizzle lightly with olive oil. To pasta, add ham, celery, Vidalia onion, green onion, cheese, and tomatoes; toss and set aside.
- In a separate bowl, whisk together pickle juice, mayonnaise, milk, Ranch dressing mix, salt, and pepper. Pour over pasta mixture, and toss to coat thoroughly; taste and adjust seasonings. Refrigerate several hours or overnight.
- Toss before serving, adding additional milk up to ¼ cup, if needed to moisten.
Makes about 8 servings
