Lorene's Famous Blender Slaw

- 1 large head cabbage (discard outer leaves), about 4 pounds
- ½ cup chopped carrot
- ¼ cup chopped sweet onion
- 1 cup mayonnaise
- 1½ tsp salt
- ½ tsp ground black pepper
Instructions
- Cut cabbage into sixths; remove core. Cut each section into quarters.
- Place a portion of the cabbage in a blender until full; cover with water. Pulse 8 to 10 times, or until cabbage is finely chopped. Pour into a fine sieve to drain. Repeat with remaining cabbage, adding the carrot and onion to one batch on the bottom of the blender. Squeeze cabbage until dry.
- Combine prepared cabbage mixture, mayonnaise, salt and pepper in a large bowl, mixing well. Cover and chill for at least 4 hours or overnight.
Makes 8 to 10 servings
(about 5 cups)
