    Mango Habanero Dressing

    List of Ingredients


    • 1 mango, peeled, seeded and diced
    • 1 cup white wine vinegar
    • 1 Tbsp Dijon mustard
    • 4 Tbsp lime juice
    • 1 Tbsp brown sugar
    • 1 clove garlic, minced
    • 1 habanero, seeded and minced
    • 3 Tbsp chopped fresh cilantro
    • 2 scallions, sliced
    • Sea salt to taste


    Instructions


    1. Peel and seed the mango; cut half into a small dice and set aside.

    2. Place the other half of the mango into a blender with the next 5 ingredients and blend 10 seconds. Add the cilantro and scallion and season to taste with the sea salt. Cover and refrigerate until needed. (Will last 1 week in the refrigerator.)

      Makes 12 servings.

      Chef's Note: This dressing is deelish, but it packs a large wallop. I like to use it over my warm chicken salad or freshly grilled fish over rice or pasta.
