Mango Salad with Tomatoes and Red Onion

List of Ingredients
- 4 ripe mangoes, peeled, pitted and cubed
- 4 yellow or red tomatoes, seeded and diced
- 1/2 cup minced red onion
- 1/4 cup chopped fresh cilantro
- 2 Tbsp olive oil
- 2 Tbsp fresh lime juice
- 4 tsp balsamic vinegar
- 2 tsp sugar
- Salt and freshly ground black pepper
Instructions
- In large bowl, combine mangoes, tomatoes, onion and cilantro. Toss to combine.
- In small bowl, whisk together oil, lime juice, vinegar, and sugar. Add to mango mixture and toss to combine. Season to taste with salt and pepper.
Makes 8 to 10 servings.
