Marinated Cucumbers

- ½ cup cider vinegar
- 2 teaspoons sugar
- 1 teaspoon salt
- 6 cups cucumbers, peeled and very thinly sliced
- 1 medium red onion, thinly sliced
Instructions
- Combine the vinegar, sugar, and salt in a small saucepan and heat just enough to completely dissolve the sugar. Cool to room temperature.
- Combine the cucumbers and onion with the vinegar mixture and toss gently using two forks. The cucumbers will seem dry, but the salt will draw out moisture from the cucumbers to create more liquid.
- Cover and refrigerate for at least 30 minutes before serving. The cucumbers can be stored for up to a week in the refrigerator.
