    Mini BLT Salads

    Recipe Introduction

    "BLTs are delightful every which way you can enjoy them. We love turning them into an easy-to-serve salad that's drizzled with a delicious Greek Yogurt dressing."

    List of Ingredients

    â—¦ 12 leaves lettuce (butter or romaine) or endive spears
    â—¦ 8 slices crispy-cooked bacon, crumbled
    â—¦ 1 cup cherry tomatoes, chopped
    â—¦ ½ teaspoon salt
    â—¦ ½ teaspoon black pepper
    â—¦ ¼ cup diced chives

    Recipe

    Rinse lettuce leaves and pat dry. Fill each lettuce leaf evenly with bacon and tomatoes. Sprinkle with sea salt and black pepper.

    Makes 12 salads



    BLT Greek Yogurt Dressing:

    â—¦ ½ cup plain Greek yogurt
    â—¦ ¼ cup mayonnaise
    â—¦ 1 teaspoon lemon juice
    â—¦ 1 clove garlic, minced
    â—¦ 3 tablespoons diced chives
    â—¦ ¼ teaspoon sea salt
    â—¦ ¼ teaspoon black pepper

    Whisk together ingredients in a small bowl and drizzle over salads. Finish with a sprinkling of diced chives.
