    My Mother's Neighbor's Potato Salad

    List of Ingredients


    • 6 large white potatoes
    • 1/2 cup mayonnaise
    • 3 Tbsp Thousand Island dressing
    • 3 Tbsp pickle relish
    • 2 Tbsp Dijon mustard
    • 1/8 tsp Worcestershire sauce
    • 3 ribs celery, thinly sliced
    • 1 medium onion, peeled and grated
    • 1 (2-ounce) jar chopped pimientos, drained
    • 1/4 tsp salt
    • Black pepper to taste
    • 1 (3-1/4-ounce) can black olives, chopped


    Instructions


    1. Cook the potatoes in boiling water until tender. Cool, peel and slice.

    2. Stir together the mayonnaise, Thousand Island dressing, the pickle relish, mustard and Worcestershire sauce.

    3. Combine the potatoes with the celery, onion, pimientos, salt, pepper and dressing. Refrigerate. Garnish with the olives and serve.

      Makes 12 servings.
