My Mother's Neighbor's Potato Salad

List of Ingredients
- 6 large white potatoes
- 1/2 cup mayonnaise
- 3 Tbsp Thousand Island dressing
- 3 Tbsp pickle relish
- 2 Tbsp Dijon mustard
- 1/8 tsp Worcestershire sauce
- 3 ribs celery, thinly sliced
- 1 medium onion, peeled and grated
- 1 (2-ounce) jar chopped pimientos, drained
- 1/4 tsp salt
- Black pepper to taste
- 1 (3-1/4-ounce) can black olives, chopped
Instructions
- Cook the potatoes in boiling water until tender. Cool, peel and slice.
- Stir together the mayonnaise, Thousand Island dressing, the pickle relish, mustard and Worcestershire sauce.
- Combine the potatoes with the celery, onion, pimientos, salt, pepper and dressing. Refrigerate. Garnish with the olives and serve.
Makes 12 servings.
