Roasted Garlic Caesar Dressing

- 8 cloves garlic, peeled
- 1/4 cup canola oil
- 1 egg yolk*
- 1/4 cup fresh lemon juice
- 1 Tbsp minced anchovy fillets (about 4 fillets)
- 2 tsp minced garlic
- 1 tsp Worcestershire sauce
- Dash Tabasco
- 1 Tbsp Dijon mustard
- 1 tsp salt
- 1/4 tsp black pepper
- 3/4 cup olive oil
Instructions
- Place whole garlic cloves and canola oil in a small baking pan, cover with foil and bake in a preheated 375-degree oven for about 15 minutes. Place in refrigerator to cool completely before using in recipe.
- In a food processor, combine chilled garlic and oil mixture with egg yolk, lemon juice, anchovy, minced garlic, Worcestershire sauce, Tabasco, mustard, salt and pepper. Process 1 minute, then, with the motor running, slowly add olive oil. Finished dressing should be smooth and creamy. Refrigerate until ready to serve. (Dressing can be made up to 3 days in advance.)
Makes 1-3/4 cups.
* Raw eggs are not recommended for pregnant women, children, the elderly, or anyone with immune deficiencies, because they may contain salmonella bacteria.
