    Roasted Garlic Caesar Dressing

    List of Ingredients


    • 8 cloves garlic, peeled
    • 1/4 cup canola oil
    • 1 egg yolk*
    • 1/4 cup fresh lemon juice
    • 1 Tbsp minced anchovy fillets (about 4 fillets)
    • 2 tsp minced garlic
    • 1 tsp Worcestershire sauce
    • Dash Tabasco
    • 1 Tbsp Dijon mustard
    • 1 tsp salt
    • 1/4 tsp black pepper
    • 3/4 cup olive oil


    Instructions


    1. Place whole garlic cloves and canola oil in a small baking pan, cover with foil and bake in a preheated 375-degree oven for about 15 minutes. Place in refrigerator to cool completely before using in recipe.

    2. In a food processor, combine chilled garlic and oil mixture with egg yolk, lemon juice, anchovy, minced garlic, Worcestershire sauce, Tabasco, mustard, salt and pepper. Process 1 minute, then, with the motor running, slowly add olive oil. Finished dressing should be smooth and creamy. Refrigerate until ready to serve. (Dressing can be made up to 3 days in advance.)

      Makes 1-3/4 cups.

      * Raw eggs are not recommended for pregnant women, children, the elderly, or anyone with immune deficiencies, because they may contain salmonella bacteria.
