    Santa Fe Salad

    List of Ingredients


    • 1 each red, blue and white corn tortillas, cut into 1/4-inch strips
    • Vegetable oil, for frying tortilla strips
    • 5 ounces romaine lettuce, cut into 1-inch pieces
    • 4 ounces Sante Fe dressing (recipe below)
    • 1/2 tsp Cajun spice
    • 2 oz. red onion slices, cut into quarters
    • 1/3 avocado, diced
    • 2 oz. diced tomato
    • 2 oz. roasted red pepper, diced 1/2-inch
    • 2 oz. diced Mozzarella cheese
    • 1 Tbsp roasted corn (or washed, canned corn)
    • 1 chicken breast, or 6 ounces shrimp, blackened
    • *
    • -- Santa Fe Dressing --
    • 1 cup high-quality Ranch dressing
    • 2-1/4 tsp chili powder
    • 1/4 tsp ground cumin


    Instructions


    1. Fry the tortilla strips in hot vegetable oil until crisp; drain on paper towels. Meanwhile combine all dressing ingredients for Santa Fe dressing.

    2. Toss the lettuce, onion, avocado and tomato with the dressing and 1/2 teaspoon Cajun spice. Place salad on a big plate and surround with the fried tortilla strips. Sprinkle cheese over salad. Sprinkle corn over all.

    3. To blacken chicken or shrimp, heat a cast iron skillet and add 1 teaspoon vegetable oil for each chicken breast or portion of shrimp. Dust the chicken or shrimp thoroughly with blackening spice. Place carefully in skillet and cook until done.

    4. Place blackened chicken (slightly fanned) or shrimp on top of salad, and serve.
