    Shrimp Louie Salad with Thousand Island Dressing

    List of Ingredients


    • 3 hard-boiled eggs
    • 2/3 cup chopped black olives
    • 3 Tbsp lemon juice
    • 1-1/2 cups mayonnaise
    • 1/2 cup tomato-based chili sauce
    • 1/4 tsp black pepper
    • 1/2 tsp Tabasco sauce
    • 1 tsp Worcestershire sauce
    • 1/3 cup sweet pickle relish
    • 1 Tbsp grated white onion
    • 1 head iceberg lettuce
    • 1/3 cup chopped tomatoes
    • 1/3 cup chopped cucumber
    • 2/3 cup bay shrimp


    Instructions


    1. To make the Thousand Island dressing: Combine 2 finely chopped hard-boiled eggs, 1/3 cup black olives, the lemon juice, mayonnaise, chili sauce, black pepper, Tabasco sauce, Worcestershire sauce, sweet pickle relish and white onion. Mix well. (This recipe makes 2-3/4 cups of dressing. Any extra can be refrigerated for up to 10 days.)

    2. To make the salad: First remove the core from the head of iceberg lettuce. Pull off 3 to 4 whole leaves for the serving bowl, then chop another 2 leaves to place on top.

    3. Add the chopped tomatoes, cucumber, 1/3 cup black olives and a hard-boiled egg cut in half. Finish the salad with a generous helping of bay shrimp. Drizzle Thousand Island dressing over the top.

      Serves 1
