    Spicy Corn & Tomato Salad

    List of Ingredients


    • 2 cups water
    • 2 cups fresh corn kernels
    • 1 tsp salt
    • 4 ripe tomatoes
    • 1/2 cup finely minced sweet onion (i.e., Vidalia)
    • 3 Tbsp minced cilantro
    • 4 Tbsp minced flat-leaf parsley
    • 4 Tbsp lemon juice
    • 1/2 cup olive oil
    • 1-1/2 tsp ground cumin
    • 2 tsp chili powder
    • Salt to taste


    Instructions


    1. In a small saucepan, bring 2 cups water to a boil. Add the corn and 1 teaspoon salt, and cook until tender -- about 2 minutes. Drain and transfer to a medium bowl.

    2. Blanch tomatoes in boiling water for 1 minute; drain. Peel tomatoes and remove seeds. Dice tomatoes and combine with corn. Add onion, cilantro and parsley.

    3. Pour lemon juice into a small bowl and slowly add the olive oil, stirring well. Stir in cumin and chili powder. Pour dressing over tomatoes and corn. Toss well; salt to taste.
