Spicy Corn & Tomato Salad

List of Ingredients
- 2 cups water
- 2 cups fresh corn kernels
- 1 tsp salt
- 4 ripe tomatoes
- 1/2 cup finely minced sweet onion (i.e., Vidalia)
- 3 Tbsp minced cilantro
- 4 Tbsp minced flat-leaf parsley
- 4 Tbsp lemon juice
- 1/2 cup olive oil
- 1-1/2 tsp ground cumin
- 2 tsp chili powder
- Salt to taste
Instructions
- In a small saucepan, bring 2 cups water to a boil. Add the corn and 1 teaspoon salt, and cook until tender -- about 2 minutes. Drain and transfer to a medium bowl.
- Blanch tomatoes in boiling water for 1 minute; drain. Peel tomatoes and remove seeds. Dice tomatoes and combine with corn. Add onion, cilantro and parsley.
- Pour lemon juice into a small bowl and slowly add the olive oil, stirring well. Stir in cumin and chili powder. Pour dressing over tomatoes and corn. Toss well; salt to taste.
