Spicy Sweet-and-Sour Dressing

â—¦ ¼ cup apple cider vinegar
â—¦ ¼ cup pure maple syrup
â—¦ 3 tablespoons tamari or soy sauce
â—¦ 1 tablespoon Dijon mustard
â—¦ 1 clove garlic, minced
â—¦ ¼ teaspoon finely grated orange zest
â—¦ â…› teaspoon cayenne pepper
â—¦ â…› teaspoon ground cinnamon
â—¦ â…› teaspoon ground cloves
â—¦ â…› teaspoon ground ginger
Recipe
Combine the oil, vinegar, maple syrup, tamari, mustard, garlic, orange zest, cayenne, cinnamon, cloves, and ginger in a small bowl and whisk thoroughly. Taste and correct the precise balance of ingredients to your liking, adding a bit more vinegar, maple syrup, or spice, if you like.
Transfer to a bottle and refrigerate. Shake well before using.
