    Spinach, Avocado and Mango Salad

    List of Ingredients


    • -- Dressing --
    • 1/3 cup orange juice
    • 1 Tbsp red-wine vinegar
    • 2 Tbsp hazelnut oil, almond oil, or canola oil
    • 1 tsp Dijon mustard
    • 1/4 tsp salt, or to taste
    • .
    • -- Salad --
    • 10 cups baby spinach leaves (about 8 ounces)
    • 1-1/2 cups radicchio, torn into bite-size pieces
    • 8 to 12 small radishes, sliced (about 1 bunch)
    • 1 small ripe mango, sliced
    • 1 medium avocado, sliced, for garnish


    Instructions


    1. For the dressing:
      Whisk the juice, vinegar, oil, mustard, salt and pepper in a bowl.

    2. Just before serving, combine the spinach, radicchio, radishes, and mango in a bowl. Add the dressing and toss to coat. Garnish each serving with avocado slices.

      Serves 4
