Spinach Salad with Raspberry Vinaigrette

List of Ingredients



• 2/3 cup olive oil
  
• 1/2 cup raspberry vinegar
  
• 1/4 tsp salt
  
• 1/8 tsp pepper
  
• 2 bunches fresh spinach, washed and trimmed
  
• 1 small red onion, sliced
  
• 8 ounces fresh mushrooms, sliced
  
• 1 cup crumbled blue cheese
  
• 2 ripe avocados, peeled, pitted and chunked
  






Instructions



1. For dressing, stir together the oil, vinegar, salt and pepper.
   
   
2. In a salad bowl, toss together the spinach, onion, mushrooms, cheese and avocados.
   
   Pour the dressing over the salad and serve immediately.
   
   Serves 10
