Spinach Salad with Raspberry Vinaigrette

List of Ingredients
- 2/3 cup olive oil
- 1/2 cup raspberry vinegar
- 1/4 tsp salt
- 1/8 tsp pepper
- 2 bunches fresh spinach, washed and trimmed
- 1 small red onion, sliced
- 8 ounces fresh mushrooms, sliced
- 1 cup crumbled blue cheese
- 2 ripe avocados, peeled, pitted and chunked
Instructions
- For dressing, stir together the oil, vinegar, salt and pepper.
- In a salad bowl, toss together the spinach, onion, mushrooms, cheese and avocados.
Pour the dressing over the salad and serve immediately.
