Strawberry & Stilton Salad

List of Ingredients
- 2 cups (12 ounces) stemmed and sliced fresh strawberries
- 2 Tbsp chopped fresh basil
- 2 Tbsp raspberry vinegar
- 1/2 tsp sugar
- 1 tsp olive oil
- 1 tsp water
- 4 cups mixed salad greens
- 1/4 cup (1 ounce) crumbled Stilton cheese or feta cheese

- Accompaniment: French bread (optional)
Instructions
- In medium bowl, combine strawberries, basil, vinegar and sugar; toss well to coat. Cover and refrigerate 1 hour.
- Pour strawberry mixture into a strainer set over a bowl. Set aside strawberries and pour reserved liquid into a jar. Add oil and water to jar. Cover tightly and shake vigorously.
- Arrange greens onto 4 individual salad plates, dividing equally. Top each salad with 1/4 of the reserved strawberries and 1 tablespoon cheese. Drizzle each salad with 2 teaspoons dressing.
Serve with French bread, if desired.
Makes 4 servings.
