    Strawberry & Stilton Salad

    List of Ingredients


    • 2 cups (12 ounces) stemmed and sliced fresh strawberries
    • 2 Tbsp chopped fresh basil
    • 2 Tbsp raspberry vinegar
    • 1/2 tsp sugar
    • 1 tsp olive oil
    • 1 tsp water
    • 4 cups mixed salad greens
    • 1/4 cup (1 ounce) crumbled Stilton cheese or feta cheese
    • .
    • Accompaniment: French bread (optional)


    Instructions


    1. In medium bowl, combine strawberries, basil, vinegar and sugar; toss well to coat. Cover and refrigerate 1 hour.

    2. Pour strawberry mixture into a strainer set over a bowl. Set aside strawberries and pour reserved liquid into a jar. Add oil and water to jar. Cover tightly and shake vigorously.

    3. Arrange greens onto 4 individual salad plates, dividing equally. Top each salad with 1/4 of the reserved strawberries and 1 tablespoon cheese. Drizzle each salad with 2 teaspoons dressing.

      Serve with French bread, if desired.

      Makes 4 servings.
