Stuffed Tomato Salad

â—¦ 8 medium tomatoes, cored
â—¦ 2 cups finely chopped cooked chicken
â—¦ 2 large ribs celery, finely chopped
â—¦ 1 medium apple, cored and finely chopped
â—¦ ½ medium red bell pepper, finely chopped
â—¦ ¾ cup mayonnaise
â—¦ 1 tablespoon lemon juice
â—¦ ½ teaspoon curry powder
â—¦ Salt and pepper
â—¦ Lettuce, such as romaine or iceberg, to serve
Recipe
Cut the tops off the tomatoes. Cut a thin slice off the bottom so they sit level. Scoop out the pulp from inside each tomato and finely chop.
Combine the chicken, celery, apple, bell pepper, and chopped pulp in a medium bowl. Add the mayonnaise, lemon juice, and curry powder. Mix well. Season to taste with salt and pepper.
Line four salad plates with lettuce.
Transfer the tomatoes to the plates. Carefully stuff each tomato with â…› of the chicken salad, and serve immediately.
