Sweet Heat BBQ Coleslaw

List of Ingredients
- 1/2 head green cabbage, cored and shredded
- 1 tsp salt
- 2 medium carrots, peeled and grated
- 1 medium red bell pepper, stemmed, seeded and finely chopped
- 1 cup lowfat mayonnaise
- 3 Tbsp sour cream (or lowfat yogurt)
- 1/4 cup white wine vinegar
- 3 Tbsp sugar
- 1/2 to 3/4 tsp hot pepper sauce, such as Tabasco
Instructions
- Core and shred the cabbage. Put into a colander and toss with salt. Let stand 1 hour to wilt the cabbage.
- Rinse under cold running water or in a large bowl of ice water if serving immediately. Drain, pressing lightly; pat dry with paper towels. Put into a bowl with the carrots and bell pepper.
- Stir together the mayonnaise, sour cream, vinegar, sugar and hot pepper sauce. Stir the dressing into the slaw. Cover and refrigerate until ready to serve.
Makes 6 servings.
