    Sweet Onion & Spinach Salad with Warm Bacon Dressing

    List of Ingredients


    • 1 bunch fresh spinach, stemmed, washed well and dried (about 4 cups packed)
    • 1/2 small sweet white salad onion, thinly sliced
    • .
    • -- Warm Bacon Dressing --
    • 1/4 cup finely diced raw bacon
    • 2 tsp minced garlic
    • 2 tsp Dijon mustard
    • 1/3 cup raspberry vinegar
    • 2 Tbsp sugar
    • 1/2 tsp black pepper
    • 1/4 tsp salt
    • 2 Tbsp extra-virgin olive oil


    Instructions


    1. Place spinach and onion in a large bowl and refrigerate until ready to dress.

    2. In a small, nonstick pan, cook the bacon over medium-high heat. Add garlic and stir for about 30 seconds, but do not brown garlic.

    3. In a small bowl, whisk together remaining dressing ingredients, then stir into pan. Immediately remove from heat and pour over spinach and onion. Toss until salad is well coated with dressing, then serve immediately.

      Makes 4 to 6 servings.
