    Thai Chicken Salad

    List of Ingredients


    • -- Peanut Dressing --
    • 1/4 cup bottled Thai peanut stir-fry sauce
    • 3 Tbsp fresh lime juice
    • 2 tsp freshly grated ginger
    • 1/2 tsp minced garlic
    • *
    • 8 cups loosely packed torn Romaine lettuce
    • 2 cups shredded cooked chicken
    • 1-1/2 cups thinly sliced English (hothouse) cucumber
    • 3/4 cup shredded carrots
    • 1/3 cup chopped fresh cilantro
    • 1/4 cup chopped fresh mint leaves
    • Garnish: Chopped peanuts


    Instructions


    1. For the Dressing: Whisk dressing ingredients in a large serving bowl until well blended.

    2. Add remaining ingredients; toss to mix and coat. Sprinkle with chopped peanuts.

      Serves 4



    Final Comments


    VARIATION: For a different presentation, shake the dressing in a cruet; line individual salad bowls with lettuce, top with the remaining ingredients, then pass the dressing at the table.
