Thai Chicken Salad

List of Ingredients
- -- Peanut Dressing --
- 1/4 cup bottled Thai peanut stir-fry sauce
- 3 Tbsp fresh lime juice
- 2 tsp freshly grated ginger
- 1/2 tsp minced garlic
- *
- 8 cups loosely packed torn Romaine lettuce
- 2 cups shredded cooked chicken
- 1-1/2 cups thinly sliced English (hothouse) cucumber
- 3/4 cup shredded carrots
- 1/3 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint leaves
- Garnish: Chopped peanuts
Instructions
- For the Dressing: Whisk dressing ingredients in a large serving bowl until well blended.
- Add remaining ingredients; toss to mix and coat. Sprinkle with chopped peanuts.
Serves 4
Final Comments
VARIATION: For a different presentation, shake the dressing in a cruet; line individual salad bowls with lettuce, top with the remaining ingredients, then pass the dressing at the table.
