    Thai Cucumber Salad *

    • 1 cup peeled, sliced cucumbers
    • 1 red onion, sliced thin
    • 1 red chili pepper, sliced
    • 4 Tbsp sugar
    • 2 Tbsp vinegar
    • ½ tsp salt
    • 4 Tbsp hot water


    Instructions


    1. Arrange cucumber, onion, and pepper in layers in serving bowl.

    2. Mix sugar, vinegar, salt, and hot water together, stirring until sugar is dissolved. Pour liquid over cucumbers and serve.
      I like to let the salad chill for at least one hour before serving.

      Makes 2 to 3 servings



    Final Comments


    * This salad is a family favorite; it is great for everything from picnics to summer barbecues. It stands up well to long chilling times - because the longer it sits, the better it gets! You may want to double the dressing... I usually do!
