Thai Cucumber Salad *

- 1 cup peeled, sliced cucumbers
- 1 red onion, sliced thin
- 1 red chili pepper, sliced
- 4 Tbsp sugar
- 2 Tbsp vinegar
- ½ tsp salt
- 4 Tbsp hot water
Instructions
- Arrange cucumber, onion, and pepper in layers in serving bowl.
- Mix sugar, vinegar, salt, and hot water together, stirring until sugar is dissolved. Pour liquid over cucumbers and serve.
I like to let the salad chill for at least one hour before serving.
Makes 2 to 3 servings

* This salad is a family favorite; it is great for everything from picnics to summer barbecues. It stands up well to long chilling times - because the longer it sits, the better it gets! You may want to double the dressing... I usually do!
