Tomato-Cucumber Salad

List of Ingredients
- 2 large tomatoes, cut into large chunks
- 2 cucumbers, peeled, seeded and sliced into 1/4-inch chunks
- 1/2 Bermuda onion, cut up
- 1 cup black olives, pitted and cut in half
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 1 Tbsp red wine vinegar
- Salt and freshly ground pepper
- Fresh mint, finely minced
Instructions
- Mix tomatoes, cucumbers, onion and olives in a bowl. Toss with oil, vinegar, salt and pepper. Sprinkle with crumbled feta and mint. Toss lightly and serve.
