Walnut Oil Dressing

List of Ingredients
- 6 Tbsp good-quality red wine vinegar
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
- 6 Tbsp walnut oil
- 1/2 cup plus 2 Tbsp safflower oil
Instructions
- In a small bowl, whisk together the vinegar, garlic, salt, and pepper. Add the oils and whisk until creamy. Taste and adjust the seasonings. Serve at room temperature. (The dressing will keep in a tightly covered jar in the refrigerator 1-1/2 to 2 weeks.)
Makes about 1-1/3 cups.
