Watercress, Pear & Parmesan Salad

List of Ingredients
- 1 firm, sweet pear
- 4 handfuls of watercress
- 4 handfuls of arugula
- Extra virgin olive oil, for drizzling
- A squeeze of fresh lemon
- Salt and freshly ground pepper
- Parmesan cheese
- Walnuts
Instructions
- Wash, peel and core pear and cut it into slices. Set a few slices aside, and place the rest in a bowl with the watercress and arugula.
- Grate (or finely chop) the remaining pear slices and add to the salad. Drizzle on some extra virgin olive oil, a squeeze of fresh lemon, and season with salt and freshly ground pepper.
Toss the salad; then shave Parmesan cheese over it. Top with crumbled walnuts.
