    Watercress, Pear & Parmesan Salad

    List of Ingredients


    • 1 firm, sweet pear
    • 4 handfuls of watercress
    • 4 handfuls of arugula
    • Extra virgin olive oil, for drizzling
    • A squeeze of fresh lemon
    • Salt and freshly ground pepper
    • Parmesan cheese
    • Walnuts


    Instructions


    1. Wash, peel and core pear and cut it into slices. Set a few slices aside, and place the rest in a bowl with the watercress and arugula.

    2. Grate (or finely chop) the remaining pear slices and add to the salad. Drizzle on some extra virgin olive oil, a squeeze of fresh lemon, and season with salt and freshly ground pepper.

      Toss the salad; then shave Parmesan cheese over it. Top with crumbled walnuts.
