    Cajun-Spiced Grouper Sandwiches

    List of Ingredients


    • Four 4-ounce grouper (or cod) fillets
    • 2 tsp Cajun seasoning
    • 4 onion sandwich buns, split, toasted
    • 1/4 cup tartar sauce
    • 4 tomato slices
    • 4 lettuce leaves


    Instructions


    1. Spray medium skillet with nonstick cooking spray. Heat over medium-high heat until hot.

    2. Pat fillets dry with paper towel; sprinkle both sides with Cajun seasoning. Cook 10 to 14 minutes, or until fish flakes easily with fork, turning once.

    3. To assemble sandwiches: Spread sandwich bun halves with tartar sauce. Fill each with tomato slice, lettuce leaf and cooked fillet.

      Makes 4 sandwiches.
