    Chicken BLT

    List of Ingredients


    • 4 small skinless, boneless chicken breasts (pounded to 1/4-inch)
    • Salt and pepper to taste
    • Olive oil
    • 8 slices bacon, fried crisp and drained on paper towels
    • 2 small tomatoes, sliced
    • 4 romaine lettuce leaves, cleaned and patted dry
    • Mayonnaise
    • 4 sandwich rolls


    Instructions


    1. Sprinkle the chicken with salt and pepper, then drizzle with olive oil on both sides. Heat an outdoor grill, or saute pan, over medium-high heat. Add the chicken and grill or saute until lightly browned and cooked, about 4 minutes per side, depending on heat source.

    2. Split the rolls in half; spread both sides with mayonnaise. Place the chicken on the bottom half; top with bacon, lettuce, and tomato slices. Replace with top half of roll and serve.

      Makes 4 sandwiches.
