    Chicken Salad Sliders

    From "Kevin Belton's New Orleans Celebrations"

    List of Ingredients


    • ¼ cup buttermilk
    • ¼ cup Creole mustard
    • 1 ½ teaspoons Italian seasoning
    • 1 tablespoon Creole seasoning
    • ½ teaspoon celery salt
    • 1 tablespoon fresh lemon juice
    • 4 cups diced leftover cold fried chicken
    • ¼ cup chopped fresh parsley
    • ¼ cup finely diced celery
    • ½ cup thinly sliced green onions
    • Kosher salt and freshly ground black pepper, to taste
    • 12 slider buns


    Instructions


    1. Whisk together the mayonnaise, buttermilk, mustard, Italian seasoning, Creole seasoning, celery salt, and lemon juice in a large bowl.

    2. Add in the chicken, parsley, celery, and green onions. Stir gently to combine. Add salt and pepper. Cover and refrigerate for 30 minutes before serving on slider buns.

      Serves 6 ¾ cups mayonnaise
