    Chicken, Tomato & Bacon Bistro Sandwich

    List of Ingredients


    • 1/3 cup mayonnaise
    • 2 Tbsp minced onion
    • 1 Tbsp red wine vinegar
    • 1/4 tsp salt
    • 4 slices (each 1 inch thick) Italian bread
    • 4 boneless, skinless chicken breast halves, grilled and sliced
    • Romaine lettuce leaves
    • 2 lbs. ripe Florida tomatoes, cut in chunks
    • 8 slices crisp bacon


    Instructions


    1. In a small bowl, combine mayonnaise and minced onion.

    2. For the dressing: Transfer 2 tablespoons of the mayonnaise mixture to a cup; with a fork, whisk in vinegar and salt. Reserve dressing for later use.

    3. Spread toast with the mayonnaise-and-onion mixture; place on 4 plates. Top each with romaine leaves and chicken breast slices. Spoon about 1 cup tomatoes on each sandwich; scatter bacon on top.

    4. Drizzle the reserved dressing over each sandwich before serving.

      Makes 4 servings.



    Final Comments


    NOTE: Buy cooked chicken breasts -- or sprinkle uncooked breasts with 1/2 tsp salt and 1/4 tsp pepper; grill or broil until browned and no longer pink at the center, about 3 minutes per side.
