Crab Salad Sandwiches

- 3 Tbsp lemon juice
- 1 Tbsp Dijon mustard
- 1/2 cup mayonnaise
- 2/3 cup finely chopped celery
- 2 Tbsp chopped parsley
- 1 cup chopped scallions
- 1 lb. lump crabmeat
- 1/2 tsp salt
- Freshly ground pepper, to taste
- 1/2 tsp cayenne pepper
- 8 pitas
- 2 sliced tomatoes
- 1 sliced avocado
Instructions
- In a large bowl, combine the lemon juice, mustard and mayonnaise; mix well. Stir in the chopped celery, parsley, scallions, and crabmeat. Season with salt, pepper and cayenne pepper. Keep the crab salad chilled in a sealed container until just ready to serve. Sandwiches should be assembled just prior to eating.
- To assemble: Split pitas. Spoon crab mixture into pitas and add slices of tomato and avocado to each sandwich.
