    Double-Decker BLTs

    From "The Coastal Living Cookbook"


    List of Ingredients


    • 1 (16-ounce) French bread loaf
    • Olive oil-flavored cooking spray
    • Garlic-Basil Mayonnaise (recipe follows)
    • 8 lettuce leaves
    • 4 small tomatoes, thinly sliced
    • 16 bacon slices, cooked


    Instructions


    1. Cut bread into 12 (1/2-inch-thick) slices. Coat one side of each slice with cooking spray. Toast coated side until golden brown.

    2. Spread Garlic-Basil Mayonnaise on untoasted side of each bread slice; layer 4 slices with half of lettuce leaves, tomato and bacon. Top with a second bread slice, remaining lettuce leaves, tomato and bacon. Top with remaining 4 bread slices.

      Yield: 4 servings

      GARLIC-BASIL MAYONNAISE

      1/2 cup mayonnaise
      1 Tbsp chopped fresh basil (or 1 tsp dried basil)
      1/4 tsp garlic salt
      1/4 tsp pepper

      Combine all ingredients in a small bowl; cover and chill. (Yield: 1/2 cup)
