    List of Ingredients


    • -- Ricotta Spread --
    • 1 cup ricotta
    • 3 scallions or green onions
    • 6 sundried tomatoes (rehydrate and chop up)
    • 6 to 8 fresh basil leaves
    • *
    • -- Balsamic Vinaigrette --
    • 1/2 shallot
    • 1 clove garlic
    • 1/4 cup Balsamic vinegar
    • 3/4 cup olive oil
    • *
    • 1 red onion
    • Balsamic vinegar, to cover onions
    • Sliced eggplant
    • 1 beefsteak tomato
    • Salt and pepper to taste
    • Foccacia (can be bought sliced at specialty grocery stores)


    Instructions


    1. Make the Ricotta Spread by combining spread ingredients. Combine the Balsamic Vinaigrette ingredients and set aside.

    2. Cut the red onion into 1/2-inch pieces and simmer in balsamic vinegar for 45 minutes. The onions will be soft and sweet and will absorb a lot of the vinegar. Set aside.

    3. Brush sliced eggplant with the Balsamic Vinaigrette, salt and pepper, and grill or broil until golden brown (about 7 minutes per side; brush again when you turn eggplant). Slice beefsteak tomato and grill or broil.

    4. Toast foccacia, apply ricotta spread and build sandwich with grilled eggplant and tomato. Top with the balsamic onions. Serve open-faced. Drizzle a small amount of the Balsamic Vinaigrette over top of sandwich.
