    Flank Steak Hoagies

    List of Ingredients


    • 1/2 tsp ground cumin
    • 3 Tbsp olive oil, divided
    • 2 Tbsp honey
    • 2 Tbsp cider vinegar
    • 2 medium cloves garlic, peeled and minced
    • 2 tsp chili powder
    • 3/4 tsp freshly ground black pepper
    • 1/2 tsp cayenne pepper
    • 1 flank steak (about 1-1/2 lbs.)
    • 6 Italian sandwich rolls, halved lengthwise
    • 1/4 tsp salt
    • 1 cup bottled barbecue sauce
    • 2 cups shredded iceberg lettuce
    • 2 pickled jalapeno peppers, seeded and thinly sliced
    • 1/4 cup sliced roasted red bell peppers from a jar


    Instructions


    1. Stir together the cumin, 1 tablespoon oil, honey, vinegar, garlic, chili powder, black pepper, and cayenne. Place flank steak in a glass dish and pour the marinade over it. Cover and refrigerate overnight.

    2. Brush the cut sides of the rolls with the remaining 2 tablespoons olive oil. Toast under a hot broiler. Set aside.

    3. Remove the steak from the marinade, place on a broiler pan and sprinkle with salt. (Discard marinade.) Broil about 4 inches from heat source 5 minutes per side for medium-rare. Let rest 5 minutes before carving into thin slices across the grain. Put into a bowl and toss with the barbecue sauce.

    4. Pile the lettuce on the bottom halves of the rolls. Top with jalapenos and red peppers, followed by the steak. Replace tops, slice hoagies in half, and serve.

      Makes 6 servings.
