Flank Steak Hoagies

- 1/2 tsp ground cumin
- 3 Tbsp olive oil, divided
- 2 Tbsp honey
- 2 Tbsp cider vinegar
- 2 medium cloves garlic, peeled and minced
- 2 tsp chili powder
- 3/4 tsp freshly ground black pepper
- 1/2 tsp cayenne pepper
- 1 flank steak (about 1-1/2 lbs.)
- 6 Italian sandwich rolls, halved lengthwise
- 1/4 tsp salt
- 1 cup bottled barbecue sauce
- 2 cups shredded iceberg lettuce
- 2 pickled jalapeno peppers, seeded and thinly sliced
- 1/4 cup sliced roasted red bell peppers from a jar
Instructions
- Stir together the cumin, 1 tablespoon oil, honey, vinegar, garlic, chili powder, black pepper, and cayenne. Place flank steak in a glass dish and pour the marinade over it. Cover and refrigerate overnight.
- Brush the cut sides of the rolls with the remaining 2 tablespoons olive oil. Toast under a hot broiler. Set aside.
- Remove the steak from the marinade, place on a broiler pan and sprinkle with salt. (Discard marinade.) Broil about 4 inches from heat source 5 minutes per side for medium-rare. Let rest 5 minutes before carving into thin slices across the grain. Put into a bowl and toss with the barbecue sauce.
- Pile the lettuce on the bottom halves of the rolls. Top with jalapenos and red peppers, followed by the steak. Replace tops, slice hoagies in half, and serve.
Makes 6 servings.
