    Fried Grouper Sandwich

    List of Ingredients


    • 1 cup all-purpose flour
    • 1/4 cup cornstarch
    • 1 Tbsp garlic powder
    • 1/2 tsp freshly ground pepper
    • 4 (4-oz.) grouper fillets
    • 1/2 tsp salt
    • 1/4 tsp freshly ground pepper
    • 1/2 cup buttermilk
    • Canola oil
    • 4 onion sandwich rolls, split
    • *
    • -- Creamy Coleslaw --
    • 1 (10-oz.) pkg. finely shredded cabbage
    • 1/2 carrot, shredded
    • 1/4 cup sugar
    • 1/4 tsp salt
    • 1/8 tsp freshly ground pepper
    • 1/4 cup mayonnaise
    • 2 Tbsp milk
    • 2 Tbsp buttermilk
    • 1-1/2 Tbsp fresh lemon juice
    • 1 Tbsp white vinegar


    Instructions


    1. First, prepare the coleslaw: Combine shredded cabbage and carrot in a large bowl. Whisk together sugar and remaining coleslaw ingredients until blended; toss with cabbage mixture. Cover and chill for at least 2 hours. (Yield: 4 cups) The coleslaw recipe can be halved, but it's so good you'll want enough for leftovers.

    2. Combine flour, cornstarch, garlic powder, and pepper in a large shallow dish. Set aside.

    3. Sprinkle fillets with salt and pepper. Dredge in flour mixture; dip in buttermilk, and dredge in flour mixture again.

    4. Pour oil to a depth of 3 inches in a Dutch oven; heat to 350 degrees. Fry fish 5 to 6 minutes or until golden; drain on paper towels.

      Serve on rolls with creamy coleslaw.

      Makes 4 servings.
