Grilled Cheddar & Golden Tomato Sandwich

- -- Tarragon Dressing --
- 4 Tbsp light mayonnaise
- 2 Tbsp grainy mustard
- 1-1/2 tsp finely chopped fresh tarragon (or 1/2 tsp dried tarragon, crushed)

- 3 medium golden tomatoes, sliced 1/4-inch thick
- 12 slices good-quality bread
- 6 ounces white Cheddar cheese, thinly sliced
- Freshly ground black pepper
- 3 Tbsp butter, melted
Instructions
- To prepare the dressing: Stir together the mayonnaise, mustard and tarragon. Set aside in the refrigerator if not using right away.
- To prepare the sandwiches: Drain the tomato slices on a paper towel-lined plate for a few minutes. Lay out the bread slices and spread the dressing on 6 of the slices. Top with slices of cheese and then the tomatoes. Grind a little pepper over each sandwich. Place the remaining bread slices on top, pressing down lightly.
- Heat 2 large nonstick skillets over medium heat. Brush the tops of the sandwiches with some of the melted butter. Place the sandwiches, buttered-side down, in the hot pan. Press down lightly with a spatula. Toast about 4 minutes, or until golden. Brush the tops with melted butter, flip sandwiches, press lightly and continue toasting a couple of minutes, or until the bread is golden and the cheese has melted.
Cut each sandwich in half and serve.
Makes 6 sandwiches.
