Grilled Cheese Sandwich with Pepperoncini

- 8 slices whole-grain or whole-wheat bread
- 8 (¼-inch-thick) slices Cheddar cheese
- Pickled pepperoncini (slice stem end from each pepper and drain juice)
- 1/3 cup oil-packed sun-dried tomatoes, drained
- 8 (¼-inch-thick) slices mild Muenster cheese
- Softened butter
Instructions
- Layer the Cheddar cheese on 4 slices of bread, followed by the pepperoncini, tomatoes, and Muenster cheese. Complete each sandwich with a second slice of bread.
- Grill the sandwiches in a little butter until they are nicely browned and the cheese melts, turning once after lightly buttering the tops.
Makes 4 sandwiches.
