    Herb Filet Mignon Sandwiches with Onion Marmalade

    List of Ingredients


    • 2 lbs. filet mignon
    • 1 tsp thyme
    • 1 tsp rosemary
    • 1 Tbsp olive oil
    • 2 cloves garlic, mashed
    • .
    • -- Onion Marmalade --
    • 2 onions, sliced
    • 2 Tbsp olive oil
    • 2 cloves garlic, minced
    • 1 shallot, diced
    • 2 cups Cabernet Sauvignon
    • 1 cup sugar
    • .
    • 1/4 lb. Gorgonzola cheese
    • 1 Tbsp mayonnaise
    • Baguette or other hard bread


    Instructions


    1. Rub filet mignon with thyme, rosemary, olive oil and mashed garlic. Grill to medium-rare.

    2. For the Onion Marmalade: Saute onions in olive oil. Add minced garlic and shallot. Sprinkle in additional thyme, rosemary, salt and pepper. Cook 5 minutes or until onions are soft. Add Cabernet Sauvignon and sugar; reduce until thickened. Chill until ready to assemble sandwiches.

    3. Combine Gorgonzola cheese with mayonnaise. Spread on sliced bread. Add slices of steak and top with onion marmalade.
