Herb Filet Mignon Sandwiches with Onion Marmalade

- 2 lbs. filet mignon
- 1 tsp thyme
- 1 tsp rosemary
- 1 Tbsp olive oil
- 2 cloves garlic, mashed

- -- Onion Marmalade --
- 2 onions, sliced
- 2 Tbsp olive oil
- 2 cloves garlic, minced
- 1 shallot, diced
- 2 cups Cabernet Sauvignon
- 1 cup sugar
- .
- 1/4 lb. Gorgonzola cheese
- 1 Tbsp mayonnaise
- Baguette or other hard bread
Instructions
- Rub filet mignon with thyme, rosemary, olive oil and mashed garlic. Grill to medium-rare.
- For the Onion Marmalade: Saute onions in olive oil. Add minced garlic and shallot. Sprinkle in additional thyme, rosemary, salt and pepper. Cook 5 minutes or until onions are soft. Add Cabernet Sauvignon and sugar; reduce until thickened. Chill until ready to assemble sandwiches.
- Combine Gorgonzola cheese with mayonnaise. Spread on sliced bread. Add slices of steak and top with onion marmalade.
