    Prosciutto Grilled Cheese

    Recipe Introduction

    "Use this technique for any sandwich that calls for a golden, crispy outside and melty, gooey inside. If you don't have two cast iron skillets (or a panini press), weight the sandwich with another pan or plate (if the pan or plate is not heavy, weight it with a couple of cans of soup or beans). When the bottom is golden, flip the sandwich and repeat on the other side, weighted as before. Choose a firm-textured bread."

    List of Ingredients

    â—¦ 2 slices sturdy Italian bread
    â—¦ 2 tablespoons extra-virgin olive oil
    â—¦ 1 tablespoon balsamic vinegar
    â—¦ Two ¼-inch-thick slices mozzarella
    â—¦ Two ¼-inch-thick slices ripe tomato
    â—¦ 1 slice prosciutto
    â—¦ 2 tablespoons finely shredded fresh basil
    â—¦ 2 tablespoons unsalted butter, at room temperature

    Recipe

    Heat two cast iron pans over high heat. Lay the bread slices side by side on a work surface and drizzle with the oil and vinegar. Top one piece of bread with a slice of mozzarella, the tomato slices, prosciutto, basil, and the remaining slice of mozzarella. Close the sandwich and spread half the butter on the top slice.

    Place the sandwich, buttered side down, in one of the pans and quickly spread the remaining butter over the top of the sandwich. Using a pot holder or kitchen towel, place the other hot pan on top of the sandwich and press gently.

    Reduce the heat to low and cook, continuing to press, until the sandwich is golden brown and the cheese has melted, about 4 minutes. Serve immediately.
