    Smoked Pork Sandwich

    List of Ingredients


    • 1 Tbsp kosher salt
    • 1 tsp dry mustard
    • 1 tsp ground ginger
    • 1 Tbsp brown sugar
    • 1 tsp ground coriander
    • 1/4 tsp ground cloves
    • 3- to 5-lb. lean pork tenderloin
    • 1 roasted poblano pepper (sliced)
    • 1 roasted red pepper (sliced)
    • Caramelized onions
    • 6 ounces chicken stock
    • 1-1/2 ounces butter
    • 2 ounces Pick-a-Peppa sauce
    • Sourdough bread slices
    • 4 ounces smoked mozzarella cheese slices


    Instructions


    1. Mix spices and rub into raw meat. Smoke 2-1/2 hours on the grill. (Apple chips are recommended for smoking.)

    2. Slice meat and brown in canola oil. Add peppers, then onions. Add chicken stock. Add butter. Add Pick-a-Peppa sauce. Mix well and cook 5 minutes.

    3. Place mixture over sourdough bread slices. (Bread slices can be brushed with garlic oil, if desired.) Top with smoked mozzarella. Heat in oven until cheese melts.
