Smoked Salmon Salad Sandwiches

List of Ingredients
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 Tbsp chopped garlic chives
- 1 tsp chopped fresh dill
- 1 tsp chopped fresh flat-leaf (Italian) parsley
- 1/4 tsp kosher salt, optional
- 1 cup smoked salmon, skinned and flaked
- 6 to 8 sugar snap or snow peas, finely sliced
- 4 green onions, finely sliced
- 8 slices sourdough or rye bread
- 1 cup mixed greens (young lettuces, arugula and/or radicchio)
- 1/2 red or sweet onion, thinly sliced
Instructions
- Combine first 5 ingredients and let sit for 10 minutes to meld. Add salt to taste, if desired. Stir in fish, peas and green onions, and blend gently.
- Spread bread slices with 1 to 2 tablespoons salad mixture, topping with the greens and onion slices.
Makes 8 open-faced sandwiches.
