    Smoked Salmon Salad Sandwiches

    List of Ingredients


    • 1/4 cup mayonnaise
    • 1/4 cup sour cream
    • 1 Tbsp chopped garlic chives
    • 1 tsp chopped fresh dill
    • 1 tsp chopped fresh flat-leaf (Italian) parsley
    • 1/4 tsp kosher salt, optional
    • 1 cup smoked salmon, skinned and flaked
    • 6 to 8 sugar snap or snow peas, finely sliced
    • 4 green onions, finely sliced
    • 8 slices sourdough or rye bread
    • 1 cup mixed greens (young lettuces, arugula and/or radicchio)
    • 1/2 red or sweet onion, thinly sliced


    Instructions


    1. Combine first 5 ingredients and let sit for 10 minutes to meld. Add salt to taste, if desired. Stir in fish, peas and green onions, and blend gently.

    2. Spread bread slices with 1 to 2 tablespoons salad mixture, topping with the greens and onion slices.

      Makes 8 open-faced sandwiches.
