    Tuna Salad Sandwich with Jalapeno-Lime Mayonnaise

    List of Ingredients


    • 1 (12-ounce) can water-packed tuna
    • 3/4 cup low-fat mayonnaise
    • 1 jalapeno pepper, stemmed, seeded and minced
    • 1 green onion, minced
    • 2 Tbsp minced parsley or 1 Tbsp minced cilantro
    • 1/4 tsp chili powder
    • 1-1/2 Tbsp lime juice
    • 1 plum tomato, seeded and diced
    • 10 slices whole-wheat bread
    • 5 crisp lettuce leaves


    Instructions


    1. Drain the tuna well while preparing the mayonnaise.

    2. Stir together the mayonnaise, jalapeno, green onion, parsley, chili powder and lime juice. Set aside 1/3 cup. Add the diced tomato to the original batch. Combine with the drained tuna.

    3. Spread all bread slices thinly with reserved mayonnaise. Spread 5 slices with tuna salad and top with a lettuce leaf. Replace tops, cut in halves and serve.

      Makes 5 sandwiches.
