Tuna Salad Sandwich with Jalapeno-Lime Mayonnaise

- 1 (12-ounce) can water-packed tuna
- 3/4 cup low-fat mayonnaise
- 1 jalapeno pepper, stemmed, seeded and minced
- 1 green onion, minced
- 2 Tbsp minced parsley or 1 Tbsp minced cilantro
- 1/4 tsp chili powder
- 1-1/2 Tbsp lime juice
- 1 plum tomato, seeded and diced
- 10 slices whole-wheat bread
- 5 crisp lettuce leaves
Instructions
- Drain the tuna well while preparing the mayonnaise.
- Stir together the mayonnaise, jalapeno, green onion, parsley, chili powder and lime juice. Set aside 1/3 cup. Add the diced tomato to the original batch. Combine with the drained tuna.
- Spread all bread slices thinly with reserved mayonnaise. Spread 5 slices with tuna salad and top with a lettuce leaf. Replace tops, cut in halves and serve.
Makes 5 sandwiches.
