    Better-Than-Bottled Pasta Sauce

    List of Ingredients


    • 2 (28-oz.) cans plum tomatoes
    • 4 Tbsp olive oil
    • 1 tsp salt
    • 1 tsp dried basil or oregano
    • 1 tsp fennel seeds
    • 1/2 tsp sugar
    • Generous grinding of black pepper
    • 1 tsp balsamic vinegar (optional)


    Instructions


    1. Drain almost all of the juice from the tomatoes. Process tomatoes briefly in a food processor.

    2. Heat olive oil over medium-high heat in a 10-inch skillet. When oil is very hot, but not smoking, slowly pour in tomatoes. Reduce heat to medium. Add salt, basil or oregano, fennel seeds, sugar, pepper and vinegar (if using). Stir well and adjust heat so mixture simmers (do not cover).

    3. For a very fresh taste, simmer for 10 minutes; for a thicker sauce, simmer for up to 30 minutes. Serve over pasta with grated Parmesan cheese.

      Serves 4
