    Double Delicious Meat Sauce

    Source of Recipe

From "Comfort Food Shortcuts" by David Venable

    Recipe Introduction

"Made with ground beef and chopped mild sausage, this meaty, tomato-y sauce has endless uses. Ladle some over your choice of twisty pasta so the sauce gets into the nooks and crannies. You can also layer the sauce in a lasagna. Serve it on polenta or a baked potato. If you want to make it even richer, more like Bolognese, add some heavy cream toward the end. Double or triple the sauce and freeze it in small containers, so dinner is just minutes away."

    List of Ingredients

    â—¦ 2 (28-ounce) cans peeled whole tomatoes
â—¦ 1 pound mild Italian sausage
â—¦ 1 pound lean ground beef
â—¦ 1 cup chopped yellow onions
    â—¦ 6 cloves garlic, minced
    â—¦ ¼ cup tomato paste
â—¦ 1 cup lightly packed fresh basil leaves
    â—¦ 1 teaspoon dried oregano
â—¦ 1 ½ teaspoons freshly ground black pepper
    â—¦ 1 ¼ teaspoons kosher salt

    Recipe

Put the tomatoes and their juice in a large bowl, then crush by hand or with a potato masher. Set aside.

Put the sausage and ground beef in a large pot over medium-high heat. Cook the meats, breaking them into small pieces and stirring occasionally, until browned, 6 to 8 minutes.

Add the onions and garlic and cook for 3 minutes, stirring frequently. Stir in the crushed tomatoes, tomato paste, basil, oregano, pepper, and salt. Reduce the heat to medium and simmer for 25 minutes, stirring occasionally, until fully flavored.

    Makes 2 ½ quarts
