Fresh Mango-Habanero Sauce

- 6 dried apricots, softened in hot water, drained and chopped
- 2 large ripe mangoes
- 1 habanero chili
- 2 Tbsp lime juice
- 1/2 tsp ground cumin
- 1/2 tsp ground ginger
- 1/2 tsp ground nutmeg
- 2 tsp honey
Instructions
- Prepare the dried apricots and set aside.
- To remove the peel from the mangoes, make an incision from top to bottom and up to the top again. Peel away the skin. (Remove as you would the skin from an avocado.) With a small paring knife, cut the fruit from the large center pit right into a food processor.
- Wearing rubber gloves, stem, seed and mince the habanero. Add to the mangoes with the apricots, lime juice, cumin, ginger, nutmeg and honey. Process until almost smooth. Transfer to a bowl, cover and refrigerate until ready to use.
Makes about 2 cups.
