Grapefruit Butter Sauce

List of Ingredients
- 1/2 cup sugar
- 1-1/2 cups fresh grapefruit juice
- 1/4 cup white wine vinegar
- 1-1/2 Tbsp diced shallots
- 2 Tbsp heavy (whipping) cream
- 12 Tbsp (1-1/2 sticks) unsalted butter, cold, cut into pieces
- 1/2 cup seedless grapefruit segments
Instructions
- Combine sugar, juice, vinegar and shallots in a small saucepan. Reduce over medium heat to 1/4 cup. Mixture will foam up while reducing, so watch closely. Pull off and return to heat as needed to prevent boiling over.
- Add cream and cook for 30 seconds more. Remove from heat.
- Gradually whisk in cold butter, piece by piece. Add grapefruit segments and stir gently to combine. Keep barely warm until ready to serve.
Makes about 1/2 cup.
