    Honey Bourbon BBQ Sauce

    Source of Recipe

From "Love Your Leftovers" by Nick Evans

    Recipe Introduction

"There are a ton of barbecue sauces in most supermarkets these days, so one might ask why any sane person would make their own. I’ll be completely honest, I’m not sure that I have the best answer to that question. Some store-bought versions do have a lot of sugar and preservatives, but you can find good ones also. All I know is that I love my homemade version, and it doesn’t take that long to make. If you have a store-bought version that you like, go with it. If you feel like getting frisky, here’s one of my favorite homemade versions."

    List of Ingredients

    â—¦ 1 medium white onion
â—¦ ¼ cup vegetable or canola oil
    â—¦ ¼ cup butter
    â—¦ 1 to 2 serrano peppers, minced
    â—¦ 1 cup bourbon
    â—¦ ½ cup ketchup
â—¦ ¾ cup apple cider vinegar
    â—¦ ¼ cup molasses
    â—¦ ¼ cup honey
    â—¦ ¼ cup Worcestershire sauce
    â—¦ Salt

    Recipe

Grate onion so it almost dissolves in the final sauce. I use one medium onion, which measures about a cup. It doesn’t have to be exact (don’t pull out a second onion for an extra few tablespoons).

Add oil and butter to a medium pot over medium heat. Once butter is melted, add onion and minced pepper. Cook until onion is soft, but not browned, about 4 to 5 minutes.

Add bourbon, ketchup, vinegar, molasses, honey, and Worcestershire to the pan and stir well to combine. Bring sauce to a slow simmer and cook until it nearly halves in volume, about 25 minutes. Taste the sauce and season with salt. Serve immediately or store in the fridge until needed. Sauce will keep for 2 weeks in the fridge.

    Makes about 2 ½ cups
