    Mushroom Gravy

    From "My Southern Food" by Devon O'Day

    List of Ingredients


    • 1 cup sliced mushrooms
    • 6 Tbsp butter, divided
    • 3 Tbsp all-purpose flour
    • 1 tsp salt
    • 1/2 tsp pepper
    • 2 cups chicken broth
    • 1 cup milk


    Instructions


    1. Sauté the mushrooms in 2 tablespoons of the butter in a saucepan for no more than 2 minutes. Remove from the heat and set aside.

    2. In a skillet, melt the remaining 4 tablespoons butter, and whisk together the flour, salt, and pepper in the melted butter until blended. Gradually whisk in the chicken broth until completely blended.

    3. Whisk in the milk and add the sautéed mushrooms. Cook for no more than 5 minutes. When the gravy is heated through, transfer to a serving container and serve hot.

      Makes 4 cups.
