White Wine Seafood Sauce

- 1 stick butter
- 1 small, finely chopped white onion
- 1/4 cup finely chopped bell pepper
- 1 small stalk celery, finely chopped
- 1/2 clove garlic, finely chopped
- 3 heaping Tbsp flour
- 1 quart milk, not evaporated
- Salt and pepper to taste
- 3 Tbsp sherry wine
Instructions
- Saute vegetables in butter until clear and well-cooked. Add flour and mix well. Add milk and cook over low heat until smooth and thick, stirring constantly.
- Blend mixture in food processor with salt, pepper, and sherry, and pour over fish or shrimp and bake (cook shrimp a little before pouring sauce over them).
Makes 5 cups.
