    White Wine Seafood Sauce

    List of Ingredients


    • 1 stick butter
    • 1 small, finely chopped white onion
    • 1/4 cup finely chopped bell pepper
    • 1 small stalk celery, finely chopped
    • 1/2 clove garlic, finely chopped
    • 3 heaping Tbsp flour
    • 1 quart milk, not evaporated
    • Salt and pepper to taste
    • 3 Tbsp sherry wine


    Instructions


    1. Saute vegetables in butter until clear and well-cooked. Add flour and mix well. Add milk and cook over low heat until smooth and thick, stirring constantly.

    2. Blend mixture in food processor with salt, pepper, and sherry, and pour over fish or shrimp and bake (cook shrimp a little before pouring sauce over them).

      Makes 5 cups.
