    Bacon Bourbon Caramel Popcorn

    Source of Recipe

From "Southern Living Bourbon & Bacon"

    Recipe Introduction

"Bourbon-spiked, caramel-coated popcorn rises to a whole new level of irresistible with the addition of salty, crisp bacon. For an added hint of smoky flavor, use Bourbon Smoked Sea Salt."

    List of Ingredients

    • 14 cups popped popcorn
    • ½ cup cooked and crumbled bacon slices
    • Parchment paper
    • 1 cup sugar
    • ¾ cup butter
    • ½ cup light corn syrup
    • 3 Tbsp bourbon
    • 1 tsp vanilla extract
    • ¾ tsp sea salt
    • ½ tsp baking soda

    Recipe

Preheat oven to 250° F. Discard unpopped kernels from popcorn, if any. Divide popcorn and crumbled bacon evenly between two lightly greased parchment paper-lined baking sheets.

Place sugar and next two ingredients in a 2-quart heavy saucepan. Bring to a boil over medium heat, stirring constantly. Remove mixture from heat. Stir in bourbon and next three ingredients.

Pour syrup evenly over popcorn and bacon, tossing with a lightly greased spatula to coat. Bake at 250° F for 1 hour, stirring every 15 minutes. Spread on wax paper to cool, breaking apart large clumps as mixture cools. Store in an airtight container.

    Makes 13 to 14 cups
