    Caramel Popcorn

    List of Ingredients


    • 6 quarts freshly popped popcorn
    • 1 cup butter
    • 2 cups firmly packed brown sugar
    • ¾ cup light corn syrup
    • 1 tsp salt
    • ½ tsp baking soda
    • ½ tsp vanilla extract


    Instructions


    1. Preheat oven to 250° F.
      Place popcorn in a large roasting pan. Set aside.

    2. In a large saucepan, melt butter over low heat; add brown sugar and corn syrup. Bring to a boil over medium heat, stirring constantly. Boil 5 minutes, stirring occasionally. Remove from heat. Add salt, soda and vanilla; stir. Pour mixture over popcorn, stirring until popcorn is coated.

    3. Bake for 1 hour, stirring every 15 minutes. Remove from oven. Pour popcorn onto waxed paper, gently separating with a spoon. Cool completely. Store at room temperature in airtight containers.

      Makes about 6 quarts.
