    Cheddar Pecan Rounds

    List of Ingredients


    • ½ cup unsalted butter, softened
    • 8 ounces sharp Cheddar cheese, grated
    • 1½ cups all-purpose flour
    • 1 tsp salt
    • ½ cup finely chopped pecans
    • ½ tsp ground red pepper


    Instructions


    1. With an electric mixer on low speed, beat butter. Add cheese; mix well. Add flour and salt; mix well. Stir in nuts by hand.

    2. Divide dough in half, and roll into two logs, about 1½ inches in diameter. Wrap in plastic wrap and chill in the refrigerator for at least one hour, and preferably overnight.

    3. Preheat oven to 350° F.
      Slice chilled dough into ¼-inch slices and place on parchment-lined baking sheets. Bake for 15 to 17 minutes, or until crisp and golden brown. Cool on a wire rack and store in an airtight container.

      Makes about 6 dozen.
