Cheese-and-Spice Tortilla Chips

- 1/4 cup (1/2 stick) butter, cut in half
- 1/3 cup grated Parmesan cheese
- 1 Tbsp sesame seeds
- 1 Tbsp poppy seeds
- 1/4 tsp sweet paprika
- Pinch of salt
- Pinch of black pepper
- 6 flour tortillas, each 6 inches in diameter
Instructions
- Preheat oven to 400º F. Line a baking sheet with aluminum foil or parchment paper. Put the butter in a small saucepan and set it over medium heat. Stir with a wooden spoon until the butter is melted, 1 to 2 minutes. Using a pot holder, remove the pan from the heat and set it aside to cool.
- In a small mixing bowl, combine the cheese, sesame seeds, poppy seeds, paprika, salt and pepper. Stir with a fork until blended.
- Lay the tortillas on a cutting board without letting them overlap. Using a pastry brush, brush the melted butter over the top of each tortilla. Sprinkle the cheese mixture evenly over the tortillas.
- Using a sharp knife, cut each tortilla in half. Cut each half into 4 equal triangles. With a spatula, transfer the triangles to the baking sheet, arranging close together.
- Bake until the triangles are golden brown, about 8 to 10 minutes. Remove the baking sheet from the oven and set on a rack. Let the chips cool before eating.
Makes 4 dozen chips.
